Empanadas are a typical Spanish/South American dish. They can be made with any filling really, so I just used some ingredients I had lying around. I did forget to buy lettuce though, so I just made a little salad with the leftover filling. I loved the discrepancy between the cold salad and the hot filling. Even though the ingredients were almost the same, the taste was completely different.

Today was another great day: we made a long walk through Ghent, visited our favourite flea market and had a latte macchiato at a cute little coffee house. This dish was the ideal end to a great weekend.



Ingredients (for 2 people)


  • 100g margarine
  • 300g all purpose flour
  • a pinch of salt
  • 50ml water
  • 1 tsp cornstarch
  • 1 Tbsp soy milk
  • 1 can (150g) corn, drained
  • 1 small red bell pepper, diced finely
  • 10 black olives, chopped finely
  • 1 Tbsp plain soy yogurt
  • 1/2 tsp dried rosemary
  • 1 tsp dried oregano
  • 1 tsp paprika powder
  • salt
  • pepper
  • cayenne pepper
  • 15 fresh mint leaves, chopped
  • 1 scallion, chopped
  • Preheat the oven to 200°C
  • Melt the margarine in the microwave
  • Combine the all purpose flour and the salt in a bowl
  • Slowly pour in the melted margarine while stirring
  • Add the water and keep stirring
  • Roll out the dough and cut into shapes with a round cookie cutter (10 cm diameter). I got out 10 circles
  • Make the filling: combine the corn, bell pepper, olives and soy yogurt
  • Add the rosemary, oregano and paprika powder
  • Season to taste with salt, pepper and cayenne pepper
  • Heap one tablespoon of filling onto the dough circles
  • Fold the circles in half, and push the open edges together with the teeth of a fork (see the picture below)
  • Make the ‘egg wash’: combine the cornstarch and soy milk. Smear the ‘egg wash’ onto the empanadas
  • Bake the empanadas for 20 minutes, until golden
  • Meanwhile, add the mint leaves and scallion to the leftover filling
  • Divide this salad over 2 small bowls
  • Serve the salad with the empanadas

    oh I loveeeee empanadas. I usually can eat 4 in one sitting.

      Love them too! They’re fastfood-like but still healthy, a great combination!
